Ravani (Cake lenten)

INGREDIENTS
- 4 cups water
- 1 ½ cups olive oil
- 4 cups sugar
- 1 orange (juice of)
- 1/2 kgr fine semolina
- 1/2 kgr coarse meal
- 1 baking pan (diameter = 30cm)
- sugar, cinnamon and almonds for garnish ..
METHOD
- Bring all the liquid and sugar to a boil and add the meal a little at time.
- Remove from the heat and stir constantly with a wooden spoon, occassionally bring it over medium heat for a minute or so until the mixture thickens and penetrate continuously a knife into the mixture does not stick on the knife.
- Then pour the mixture into the baking pan (diameter = 30cm) and press the top with a spatula until the surface smoothens, cut into diamond shapes, and put one almond skinned in each piece.
- Then bake at 180 °c, for about 1 hour until the top is golden brownish.
- Remove from the oven and when it’s cool sprinkle with cinnamon and sugar.
