Ravani (Cake lenten)

INGREDIENTS
  • 4 cups water
  • 1 ½ cups olive oil
  • 4 cups sugar
  • 1 orange (juice of)
  • 1/2 kgr fine semolina
  • 1/2 kgr coarse meal
  • 1 baking pan (diameter = 30cm)
  • sugar, cinnamon and almonds for garnish ..
METHOD
  1. Bring all the liquid and sugar to a boil and add the meal a little at time.
  2. Remove from the heat and stir constantly with a wooden spoon, occassionally bring it over medium heat for a minute or so until the mixture thickens and penetrate continuously a knife into the mixture does not stick on the knife.
  3. Then pour the mixture into the baking pan (diameter = 30cm) and press the top with a spatula until the surface smoothens, cut into diamond shapes, and put one almond skinned in each piece.
  4. Then bake at 180 °c, for about 1 hour until the top is golden brownish.
  5. Remove from the oven and when it’s cool sprinkle with cinnamon and sugar.
