Anchovy with oregano and lemon dressing

MATERIALS
- 1kgr anchovy
- salt
- pepper
- oregano
- olive oil
- lemon juice
DIRECTIONS
- Wash anchovy and clean by cutting off the head and viscera of the abdomen.
- Press with the hand inside the abdomen until to the bone comes off and open the fish in the middle into two fillets.
- Cut the tail and close fish again.
- Place one next to to another into a baking dish.
- Add salt, pepper, oregano, some olive oil, some water and bake at 180oC for 20′-25′.
- Be careful not dry the juice in the pan.
- Before turning off the oven, add the lemon juice.
TIP: Serve with fried potatoes or vegetables.
It’s hard to find good anchovy recipes (especially since the other half is not too fond of them, but I love them!) and this one will definitely be in the rotation pretty soon! Even if I have to eat them all myself!

anchovy are very tasty! you can cook them as the recipe says and then add them also in a lettuce salad! If your other half eats salads, maybe will take a bite….

These anchovies remind me of Thassos! one of my favorite mezzes!
I love anchovies and these look so fresh. Nothing like the ones sitting in my fridge, tightly squeezed in their jar! These would be great with just a piece of good crusty bread.
