Batzina
INGREDIENTS
- 1kgr green zucchini or pumpkin
- 500gr. feta cheese
- 2 eggs
- 1 cup evaporated milk
- 3/4 cup olive oil
- 750gr. all-purpose flour (approximately)
- 1 tablespoon butter
- Salt
Traditional pie from Thessaly
METHOD
- Grate the zucchini on the grater in the thick part.
- Put it in a colander, salt it and leave for 1h.
- Then squeeze with your hands so its fluids gets out.
- Smashing the feta cheese with a fork and place it in a big bowl (keep a handful of feta cheese into another bowl).
- Add in the big bowl eggs, milk, olive oil, pumpkin and mix well.
- Add the flour, as much as it takes to be a tight batter (it might need more or less from the 750gr).
- Grease a large baking pan add the batter, the pie we should be fine!
- Add on top across the surface, the feta that you have kept into another bowl.
- Add the butter into chunks.
- Bake in preheated oven at 180oC until golden brown.
