Batzina

INGREDIENTS
  • 1kgr green zucchini or pumpkin
  • 500gr. feta cheese
  • 2 eggs
  • 1 cup evaporated milk
  • 3/4 cup olive oil
  • 750gr. all-purpose flour (approximately)
  • 1 tablespoon butter
  • Salt

Traditional pie from Thessaly

METHOD
  1. Grate the zucchini on the grater in the thick part.
  2. Put it in a colander, salt it and leave for 1h.
  3. Then squeeze with your hands so its fluids gets out.
  4. Smashing the feta cheese with a fork and place it in a big bowl (keep a handful of feta cheese into another bowl).
  5. Add in the big bowl eggs, milk, olive oil, pumpkin and mix well.
  6. Add the flour, as much as it takes to be a tight batter (it might need more or less from the 750gr).
  7. Grease a large baking pan add the batter, the pie we should be fine!
  8. Add on top across the surface, the feta that you have kept into another bowl.
  9. Add the butter into chunks.
  10. Bake in preheated oven at 180oC until golden brown.
