Kolokythopitta (pie with pumpkin)

INGREDIENTS
- 1 package of pastry sheet
- 1 pumpkin, grated dry and rigged to remove fluids
- 600gr feta cheese
- 4.5 eggs
- 60gr warm milk
- 2-3 tablespoons of trahana
- 1/3 cup olive oil
- pepper, salt
METHOD
- In a bowl add the frumenty and milk and let it rise.
- Spread some olive oil on a baking dish to prevent our pie from sticking and lay the 3 sheets lubricating them one by one on the top side and as we lay them leave the sheets edges to hung out from the pan.
- In a bowl crumble the feta cheese by hand.
- In another bowl beat the eggs (like scrambled eggs), add the zucchini, pepper and the frumenty with the milk and mix well.
- Add some olive oil and mix again.
- Add a little feta cheese from the bowl in the baking dish and lay a pastry sheet. (a)
- Add a little of the stuffing we made and we lay again a pastry sheet. (b)
- Continue with steps (a) and (b) until our ingredients finished out but keep 2 pastry sheets.
- We turn inwards the baking dish the sheets edges hunging out the baking dish and add the last sheet on top and cut with a knife the part of the last pastry sheet that is left over.
- We put some olive oil on top and we pierce the pie with a knife in 3-4 points to leave the air out.
- Bake in oven at 200oC for 1h.
