Kolokythopitta (pie with pumpkin)

INGREDIENTS
  • 1 package of pastry sheet
  • 1 pumpkin, grated dry and rigged to remove fluids
  • 600gr feta cheese
  • 4.5 eggs
  • 60gr warm milk
  • 2-3 tablespoons of trahana
  • 1/3 cup olive oil
  • pepper, salt
METHOD
  1. In a bowl add the frumenty and milk and let it rise.
  2. Spread some olive oil on a baking dish to prevent our pie from sticking and lay the 3 sheets lubricating them one by one on the top side and as we lay them leave the sheets edges to hung out from the pan.
  3. In a bowl crumble the feta cheese by hand.
  4. In another bowl beat the eggs (like scrambled eggs), add the zucchini, pepper and the frumenty with the milk and mix well.
  5. Add some olive oil and mix again.
  6. Add a little feta cheese from the bowl in the baking dish and lay a pastry sheet. (a)
  7. Add a little of the stuffing we made and we lay again a pastry sheet. (b)
  8. Continue with steps (a) and (b) until our ingredients finished out but keep 2 pastry sheets.
  9. We turn inwards the baking dish the sheets edges hunging out the baking dish and add the last sheet on top and cut with a knife the part of the last pastry sheet that is left over.
  10. We put some olive oil on top and we pierce the pie with a knife in 3-4 points to leave the air out.
  11. Bake in oven at 200oC for 1h.
