Stuffed squid with peppers and kasseri cheese

INGREDIENTS
  • 10 medium squid
  • 1 fresh onion (chopped)
  • 1 medium onion (cut into half rings)
  • 1 medium tomato (cut into half rings)
  • 1/4 yellow bell pepper (cut into sticks)
  • 1/4 red pepper (cut into sticks)
  • 1/4 orange pepper (cut into sticks)
  • 10 sticks kasseri cheese or gouda or regkato (or any cheese that melts)
  • Salt and pepper

For the sauce

  • 1 onion (chopped)
  • olive oil
  • lemon juice
  • pepper, oregano, curry, boukovo (flake powder made from the seeds of hot red peppers), nutmeg (powdered)
METHOD
  1. Wash and clean the squids.
  2. Lie them down and cut the upper side at 2-3 places to make holes to indicate the materials to be put. ATTENTION not to cut down and made rings.
  3. Add salt and pepper to the squid and fill in with the materials.
  4. Then place them one by one in a foil, making small bowls so they can roast with the sauce and place them in a baking pan or pyrex.
  5. Prepare the sauce:
    • In a bowl, add all ingredients and stir with a spoon.
  6. Add 1 tablespoon of sauce over in each squid.
  7. Close the foil on top and bake at 200oC for 30′.
  8. Open the foil and continue baking for more 10′ to brown slightly.
TIP 1: This recipe can be done also with large squid and presented as a main dish. It is very tasty and light!
TIP 2: If the sauce is not so much, do not worry. The squid will take off its fluids, so there is no fear to burn.
