Sweet orange with syrup

INGREDIENTS
- 2kgr oranges with thick skin (about 5 oranges)
- 2 kgr of sugar
- 1 vanilla (if you want)
- 6-7 drops lemon
METHOD
- Wash and wipe the oranges.
- Rub with grater gently the peeled, carefully because you must not get to the white flesh.
- Place in a large saucepan plenty of water and oranges to boil in over high heat for 45′-50′.
- Place oranges in a big bowl with cold water to cool and leave for 15′ changing the water regularly.
- Remove the oranges from the water and let it for 1h-2h to dry out their skin.
- Cut oranges in half vertically, removing the ends and cut into thick slices about 3cm.
- Place the orange slices in a sieve, putting a bowl underneath to collect the liquid that will take off and leave for 1h-2h.
- Weigh the oranges because you have to use the same weight in sugar.
- In a saucepan, add half sugar, then create layers with alternating orange slices. Repeat this step with the remaining sugar and orange slices.
- Add the liquid that you have collected and 1/2 cup water, because the oranges will come out some more liquid.
- Boil in medium heat, skim if necessary. Warning: You should not mix because it will break up the slices.
- Once the syrup thickens withdraw from the heat.
- Add the vanilla and lemon juice, stir gently and leave it to cool.
- Put it in sterilized jars.
Tip: The zest from oranges if you want to keep it, dry it for 2-3 days, spread on paper, to dry place, and you can use on your cake, on drinks or meals.
