Beef stew with okra

INGREDIENTS (serves 6)
- 6 servings of beef
- 800gr. okra
- 1 large dry onion, chopped
- 2 fresh onions, finely chopped
- 1 bunch parsley
- 1 can tomatoes (into pieces)
- 1/2 teaspoon sugar
- White vinegar, Olive oil, Salt, Pepper
METHOD
- In a bowl with water, add 2 tablespoons of vinegar, add the okra and a plate on top, because okra is light and lifts the water.
- Rinse well, and strain and put them in a strainer to remove the water.
- In a large pan add olive oil and saute the okra.
- Then add the meat and saute until browned on both sides, add the onions and then 2 tablespoons of vinegar.
- Place the okra and meat to clay pot, add salt, pepper, tomatoes (which you have mixxed with the sugar) and at the end parsley.
- Add enough olive oil as much water as needed and cover.
- Bake at 200oC, and cook until the sauce thickens.
- Served with feta, country style salad and a lot of bread!
