Grandma’s little cheese pies

Ingredients for the dough
- 1 packet of self raising flour
- 1 cup coffee oil
- 1 glass milk
- 1 sachet yeast
- 1 teaspoon salt
- ½ teaspoon sugar
- ½ package of margarine
Ingredients for the filling
- 200 gr. feta cheese
- 70 gr. anthotiro or cream cheese
- 70 gr. mozzarella
- 60 gr. Parmesan
- 1 egg
- Pepper
METHOD
- Sieve the flour and put it in a bowl with the yeast, sugar and salt and stir.
- In the middle make a hole and add in there the oil and the milk and begin to knead until it becomes a dough like bread.
- Let the dough a bit on the side and prepare the filling.
- Grate all the cheeses, beat the egg, mix together and add the pepper.
- Then take the dough and form an elongated loaf which cut into five equal pieces.
- Take one piece and roll out a sheet the more rounded as we can.
- Then take a knife and cut the sheet as follows:
- Make a cross, thus dividing it into four pieces and then cut each piece in other two equal pieces, thus forming a total of 8 triangles.
- Then take a spoonful of the mixture with the cheese and place the stuffing in the middle of our base of a triangular sheet, cover well with the two ends of the filling and roll so the little pie has the shape of croissants. Continue with the remaining pieces of dough.
- Meanwhile smeared with margarine a large baking pan and place in it all the little pies with the nose to the bottom so they don’t open during baking.
- Leave enough distance between them bacause it will swell.
- Beat the 2 egg yolks with some water and brush on top to get color during baking.
- Bake in the air for about 20′-25′ until golden.
