Roasted tomatoes with anthotiro and herbs

INGREDIENTS
- 6 slices stale rustic bread or wholegrain
- 3-4 tough tomatoes
- 12 slices of anthotiro (soft cheese)
- 1 tablespoon sugar
- 1 tablespoon balsamic vinegar
- 1 clove garlic (reduced to a pulp)
- Thyme
- Rosemary
- Basil (5-6 leaves)
- Olive oil
- Salt
METHOD
- Wash and chop tomatoes into thick washers (they must be almost 12 washers).
- Place them in a pan, sprinkle with the olive oil, the sugar, the basil, the rosemary and the thyme.
- Bake them for 20′ in oven at 180oC.
- Toast bread in a toaster or in the oven.
- Beat 1/2 cup olive oil with the balsamic until it is creamy blend.
- With the help of a brush spread the warm bread slices with the mixture.
- Place a piece of cheese and on top a slice of tomato.
- Continue until all the ingredients finished and place them on platter.
- Sprinkle with salt and a little more olive oil and balsamic mixture.
