Roasted tomatoes with anthotiro and herbs

INGREDIENTS
  • 6 slices stale rustic bread or wholegrain
  • 3-4 tough tomatoes
  • 12 slices of anthotiro (soft cheese)
  • 1 tablespoon sugar
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic (reduced to a pulp)
  • Thyme
  • Rosemary
  • Basil (5-6 leaves)
  • Olive oil
  • Salt
METHOD
  1. Wash and chop tomatoes into thick washers (they must be almost 12 washers).
  2. Place them in a pan, sprinkle with the olive oil, the sugar, the basil, the rosemary and the thyme.
  3. Bake them for 20′ in oven at 180oC.
  4. Toast bread in a toaster or in the oven.
  5. Beat 1/2 cup olive oil with the balsamic until it is creamy blend.
  6. With the help of a brush spread the warm bread slices with the mixture.
  7. Place a piece of cheese and on top a slice of tomato.
  8. Continue until all the ingredients finished and place them on platter.
  9. Sprinkle with salt and a little more olive oil and balsamic mixture.
