Summer Green Beans

INGREDIENTS
- 1kgr fresh green beans (trimmed and washed well)
- 1 large dry onion (chopped)
- 2-3 cloves garlic (chopped)
- 2 carrots (peeled and sliced)
- 2-3 potatoes (cleaned and cut into pieces)
- 1 to 2 zucchini (cut into thick slices)
- 5-6 stalks parsley
- 3 tomatoes (minced)
- 1/4 cup olive oil
- 1/2 cup red wine
- Salt and pepper
METHOD
- Place the oil in a saucepan to heat well, add the onion and garlic and stir briefly.
- Add potatoes, carrots and zucchini and saute them.
- Add the parsley and fresh green beans and saute them for a while.
- Add wine and let evaporate the alcohol.
- Add the tomatoes, salt, pepper, mix well and cook over medium heat.
TIP: You can add some water if the broth is fewer and the vegetables haven’t boiled yet.
