Zucchini in layers

INGREDIENTS
  • 10-12 zucchini
  • 400-500 gr. minced
  • 5-6 fresh onios (white part and a little green)
  • 1 medium dry white onion (chopped)
  • lots of parsley
  • 2-3 tbs chopped dill
  • 1/3 cup olive oil or as desired
  • 4-5 tbs rice (Carolina)
  • ½ -1 cup hot water
METHOD
  1. In a pot, in moderate heat leave the onion to fuming, add 4-5 tbs olive oil and saute minced, until it will left without liquid and at the end add the fresh onions, the herbs, the salt, the pepper and the rice.
  2. Leave the mixture to cool and the rice pulls the remaining liquids.
  3. Cut into thick washers the zucchini and poured a layer of zucchini into a Pyrex or pan.
  4. Add a layer of the mixture and then on top another layer with zucchini.
  5. Cook for about 1h at 170oC.
TIP1: You can also use this recipe as an appetizer with a light bechamel sauce on top, is excellent.
TIP2: You can also dress it with fresh lemon juice
