Trachana with sour milk, tomato and paprika

INGREDIENTS
- 1 cup trachana (frumenty)
- 1 cup sour milk (xinogalo)
- 1 tablespoon butter
- 4 medium sized tight tomatoes, chopped in cubes
- Paprika
- Salt
METHOD
- In a saucepan, heat the butter, add tomatoes and stir carefully for 1′ not to melt.
- Add the sour milk, salt, paprika, 1lt of water and trachana.
- Boil until the trachana thickens.
- Serve with grated kasseri cheese and croutons.
