Trachana with sour milk, tomato and paprika

INGREDIENTS
  • 1 cup trachana (frumenty)
  • 1 cup sour milk (xinogalo)
  • 1 tablespoon butter
  • 4 medium sized tight tomatoes, chopped in cubes
  • Paprika
  • Salt
METHOD
  1. In a saucepan, heat the butter, add tomatoes and stir carefully for 1′ not to melt.
  2. Add the sour milk, salt, paprika, 1lt of water and trachana.
  3. Boil until the trachana thickens.
  4. Serve with grated kasseri cheese and croutons.
