Traditional meat soup with vegetables

INGREDIENTS
- 1kgr-1.5kgr calf (soft part)
- 3 zucchini (cut into small cubes)
- 2 onions (cut into small cubes)
- 3 large carrots (cut into small cubes)
- 3 large potatoes (cut into small cubes)
- 2 tomatoes (cut into small cubes)
- 2-3 spring onions (chopped)
- 1 bunch celery (chopped)
- 1 bunch parsley (chopped)
- 6-7 lettuce leaves (chopped)
- 4-5 chard leaves (chopped)
- 2-3 roots spinach (chopped)
- 2-3 tablespoons olive oil
- 1 cup orzo
- Salt and pepper
METHOD
- Add the calf in a saucepan to boil.
- When calf is ready, remove from the pan and cut into small pieces.
- Add the calf back into the saucepan, add all the vegetables, the olive oil, as much water as needed and cook for 30 minutes.
- When vegetables are ready, add the orzo, let it boil for 2′ and close the heat, cover the saucepan and left for 15 minutes until orzo risen itself.
TIP 2: You can also use 1 chicken instead of calf.

A wonderful soup, hearty and healthy. I usually make my beef soup with slices of shin beef with a slice of the marow bone in the middle of the meat. I believe that is the same as the calf meat you are referring to, same part of the animal. This is a good versatile recipe because you can switch up any of the veggies for whatever you might have in the house. Thnx for sharing.
