Chionoules (Snowballs)

INGREDIENTS
- 500gr potatoes
- 500gr icing sugar
- 500gr coconut (grated)
- 1 teaspoon mastic liqueur
METHOD
- Boil the potatoes and then mash them and leave them to cool slightly.
- In a bowl add the mashed potatoes, the icing sugar, the coconut and the liqueur and mix well.
- Shape into small balls and sprinkle with coconut.
TIP: If you want, before make the balls, you can divide the dough and paint the mixture with food coloring.

This is like what we call klepon in Indonesia. The different, we use glutinous rice flour and fill with palm/coconut sugar.

My Grandma used to make these when I was little! They are wonderful! I love how you have colored them pastel, they are beautiful.
I like the sound of these. I’ve heard of using potatoes for chocolate cake and I am reading The Guernsey Literary and Potato Peel Pie Society so this sounds like a perfect and delicious sweet snack to nibble on.
