Chionoules (Snowballs)

INGREDIENTS
500gr potatoes
500gr icing sugar
500gr coconut (grated)
1 teaspoon mastic liqueur
METHOD
Boil the potatoes and then mash them and leave them to cool slightly.
In a bowl add the mashed potatoes, the icing sugar, the coconut and the liqueur and mix well.
Shape into small balls and sprinkle with coconut.
TIP: If you want, before make the balls, you can divide the dough and paint the mixture with food coloring.

Wow, I love these! I’ve never heard of them. I wonder why there aren’t more sweets with potatoes. Is this a special Greek recipe? Such a great idea. They are so cute and colorful too.

This is like what we call klepon in Indonesia. The different, we use glutinous rice flour and fill with palm/coconut sugar.

I like the sound of these. I’ve heard of using potatoes for chocolate cake and I am reading The Guernsey Literary and Potato Peel Pie Society so this sounds like a perfect and delicious sweet snack to nibble on.
