Beef Soup

INGREDIENTS
- 1,5 kgr beef
- 1 leek (cut in washers)
- 10-12 small onions
- 10 small potatoes
- 8-10 baby carrots
- 1 bay leaf
- 1 sprig rosemary
- thyme
- 1 liter beef broth
- 1 lemon peel
- olive oil, salt, pepper
METHOD
- Wash beef and cut into medium pieces.
- Put in a saucepan and add about 1.5 liter water.
- Boil the calf over high heat and remove the foam.
- When the meat is cooked, add the beef broth, the bay leaves, the rosemary, the peel the lemon, the thyme, the onions and the potatoes.
- Add a little salt, pepper and olive oil and simmer.
- About 15 minutes before remove from the heat, add the carrots and leeks.
- Remove the bay leaf, the rosemary and the lemon peel.
- Serve warm with plenty of lemon juice!
TIP: This soup is very nutritious for the kids! But if you are going to cook it for kids, remove the pepper, and a quantity of spices and some onions! If you want, you can pulped it to make velvet soup!

I had forgotten how good beef soup can be until recently. It’s really a perfect soup for winter, and hearty enough to be a meal in itself. I ended up making mine with leftover rib roast and barley. Thanks for sharing your delicious recipe.
I’m a big fan of soup, but I particularly love broth soups like this. I would be happy to tuck into this after a walk in the countryside (or any time really). I like the addition of the lemon peel and lemon juice in your recipe.
