Bakaliaros (cod) with greens

INGREDIENTS
- 4 cod fillets
- 1-2 eggs
- bread-crumbs
- flour, all purpose
- Salt and pepper
- oil for frying
METHOD
- Add salt and pepper to the fish and leave for a while until you prepare the remaining ingredients.
- In a frying pan add 1cm (height) olive oil and let it warm enough.
- In a bowl, whisk the egg to make a light omelette.
- In another bowl, put the bread-crumbs on another one the flour.
- Pass the fish first into flour, then into the egg and finally into the flour.
- Fry the cod into the hot olive oil for a while until golden brown on both sides.
- Serve with seasonal greens or vegetables.
